Must… add… orange. It seems like I have to have orange in at least one part of my meal each day. Today, it was breakfast.
I had dying bananas. And a bag of fresh carrots. Then I got this blog post from Kathy’s Happy Healthy Life blog post in my inbox:
So it was done.
The thing about vegan banana bread is that its so healthy. Literally… just a little maple syrup, not even a lot of coconut oil because the bananas are the boss. They do it all, adding sweetness and lots of flavor.
I like to have this for breakfast with some almond milk and her homemade cashew maple cinnamon cream to spread on top. (that recipe follows the bread recipe).
The only changes I made was that I added pecans instead of walnuts and soaked some raisins (about 3/4 cup) for 20 minutes and folded those in with the grated carrots.
