Have Snacks for a Long Drive

Atlanta Bound!!
.. Well okay, I’m already here. But still. Yesterday I made the 8 hour drive- the first time I drove that long alone!

I hate food on the road… It’s always fast food, highly processed junk. A foodie like me can’t take it. So I prepared some snacks to keep me fueled on the journey.

My baked sweet potato fries were perfect for one-handed driving. Just reach in… But be weary- your fingernails will get very cinnamon-y!
recipe
I sweet potato, peeled and cut in slices
Cinnamon
Chili powder
Sea salt
Olive oil
Raisins and pecans, optional

Preheat oven to 425.
Toss sweet potatoes with ingredients.
Bake for 20 mins.

Roasted pumpkin cinnamon chickpeas give a protein boost! Another recipe that will get your fingers a little dirty ..
Recipe
1 can chickpeas
Cinnamon
1/2 tsp Vanilla
1 tbsp pumpkin purée

Preheat oven to 375.
Toss chickpeas with ingredients.
Bake for 20 mins.

I also cut up an apple and soaked it in a water and lemon bath for 10 mins to keep it from browning.

I didn’t have to buy any bad food on the drive!
